Pay no attention to Happiest about the meat washing. You should always rinse (not wash) poultry and pat it dry, especially if it's defrosted. I make a similar recipe. You might want to season the cracker crumbs with garlic salt or Italian seasoning or whatever because the cooking process will take away some of the flavor. Roll the chicken in melted er and then in the crumbs. I'd also raise the oven temp to 375 or even 400. When the juices run clear, the chicken is done. I do this recipe with crushed up BBQ potato chips.
